I have got a call for delivery, was waiting for the same but not delivered thus happened twice.
I had purchased Ajwain honey from Scrolling Bee. The packing was very elaborate to stop spillage. The honey contains a very mild fragrance- I am not sure if this is a feature of all Ajwain honey -the fragrance is pleasing and the honey is tasty
Taste wise Product seems good but, I have found sugar deposit at the bottom of the jar like other honey brand like Safola, Dabur & Patanjali etc.
What is the reason of sugar deposit! Is it also sugar syrup added?

1. Yes all MNC honey have some crystalization and that is reached after processing of honey, which means the product had more moisture, it was processed(enzymes activity diminished) and post that the product crystlizes
2. When we extract honey we ensure honey has less moisture to begin with and there is no need to process the honey and quality is entact- some crystalization is formed and which is ok - you can keep the jar in sunlight for 30 minutes to make honey liquid
I didn’t quite enjoy the flavour of this honey, but it’s a good product barring the taste

On my last purchase. I found mixing of sugar in the honey when I consume the left out honey in the bottom of the bottle using my finger it is surprising to note that when I chew the last honey with my front teeth mixing of sugar can be observed. Anyone can check by consuming last left out honey by chewing left out honey if I am wrong.
Sir Honey crystallization is not the right question to ask, instead you should ask:
1. Is the honey raw or not?
2. How much moisture is there in honey? More moisture means honey can ferment.
3. Because moisture is bad for honey – MNC companies reduce it by heating it.
4. Heated honey quality is not good.
5. MNC companies pay fix amount to beekeepers when they buy honey from them and because of this reason they don’t have right interests in extracting low moisture honey.
6. Low moisture means bees evaporate the moisture and this is a time-consuming but the right method.
7. When we do beekeeping, we maintain low moisture as we have to sell honey directly to our customers.
8. Some types of honey have crystallization properties and they remain crystalized even with low moisture, because of the glucose-fructose ratio in the honey
